When I substituted ½ cup of olive oil plus 2 tablespoons of water for the butter, the dough was appropriately moist but not slick, and I had no trouble cutting the baked crust into pristine wedges. An absence of water produces a too-fragile crust. It’s less fat overall, but that water is important because it interacts with the protein in the flour to form gluten, which provides the structure that holds the crust together. So 10 tablespoons of butter is actually 8 tablespoons of fat and 2 tablespoons of water. ![]() Unlike olive oil, butter isn’t a pure fat it’s almost 20 percent water. Ten tablespoons of oil made the dough shiny with grease, and the baked crust was so tender and crumbly that I couldn’t cut it into wedges without it disintegrating. Tweaking that recipe by substituting olive oil for the melted butter seemed like a no-brainer, but it didn’t work out quite the way I had envisioned it. There was no chilling or rolling required, and the crust baked up crunchy and rich. Then, instead of rolling it out, I crumbled it straight into the tart pan and pressed it to an even thickness. I simply stirred 10 tablespoons of warm melted butter into the dry ingredients until the mixture resembled Play-Doh-no food processor necessary. Years ago I developed a tart dough in which I defied convention by using melted rather than cold butter. And maybe, as with the cake, olive oil would make the recipe even easier. Maybe this lemon tart recipe was my chance to help the fruit side of the pairing shine. Olive oil and lemons have such an undeniable affinity that it seems a shame not to make the most of it. And readers loved that olive oil cake, but they voiced one small objection: not enough lemon flavor. I added a near-homeopathic dose of lemon zest-just ¼ teaspoon-to boost the oil’s fruity, floral notes and left it at that. In fact, the olive oil flavor in the cake was so subtle that I had to take care not to obscure it. ![]() Using a liquid fat in that cake made the mixing process easy and quick: There was no softening of the fat and no creaming until light and fluffy, yet the crumb was beautifully plush and fine and the cake had an intriguing hint of olive oil flavor. But developing a recipe for an olive oil cake a couple of years ago reminded me that other fats offer advantages, too. What could I possibly contribute? Well, actually, I had an idea: extra-virgin olive oil.Īdmittedly, it’s counterintuitive: Butter is featured in both the crust and the filling of almost every lemon tart. After all, bakers have been producing handsome, crisp-crusted tarts filled with smooth, bracing, just-sliceable curd for centuries without my assistance. ![]() When you’re a test cook, being asked to develop a recipe for a classic item such as lemon tart can be daunting.

![]() Here's how we developed our list of top solar batteries.įirst, we determined which categories would be used to evaluate each battery's efficiency, performance, capacity and value. However, there are ways to evaluate and compare these batteries in order to find the stand-outs. It should also be said that we didn't have any form of hands-on testing with any of the batteries we scored. Solar is a very site-specific and personalized decision process, so it's a little tricky to pinpoint exactly which solar battery is the "best" battery for your home's energy needs without doing an on-site consultation. How we evaluated the best solar batteriesįirst and foremost, it's important to call out that not every solar battery is right for every home. You should also go in informed: Understand your energy use and costs, the local and national incentives available to you, like net metering or tax breaks, and your likely payback period. However, you should always shop around, getting multiple quotes before deciding to move ahead. We've rated and reviewed companies in a way we find to be most helpful to solar panel shoppers. We assume you care that a company operates in your state, not others. We also don't consider how many states a company operates in, though our list is made up of companies with a larger service area. We do consider whether a company is transparent about pricing or offers a price match, as those are easily verifiable and will translate across regions. You should always get multiple quotes when shopping for solar panels, because prices can vary so much. The price of a solar installation varies from state to state because of differences in the size of a solar system, labor and permitting costs and other regional factors. While price is clearly a consideration for you, it's hard to measure in a way that makes for useful comparisons between companies. We don't consider average prices in our score. To start things off on my list of the 20 best acoustic guitar songs for beginners, I thought I’d begin with one of my favorite songs by Bruce Springsteen – The River. Creedence Clearwater Revival – Bad Moon Rising 1. So each of these three models will eventually be available in four body sizes. “I should add that on top of these models, we also have two new body styles in prototype: one is a slope‑shoulder dreadnought and the other one is an L-00 style guitar. Fairly simple appointments but a little non-traditional. ![]() The Signature Model will be Madagascar rosewood back and sides and ziricote bindings on the body, neck and headstock. “We wanted to take a traditional style and dress it up with a few luthier features like wooden bindings and some very simple inlays. ![]() And there’s another model behind that, which we have just approved prototypes for and it will be, again, a dreadnought and an OM. We just received the first batch of the Country Boys, so we will begin distributing them, I’m going to say, within a month. Are there plans to extend the Touchstone range further? You’ve announced the forthcoming Country Boy models on your website. The objective is for Eastman to build guitars that are 100 per cent of the quality of the guitars that we produce in our Lewiston, Maine ’shop – to produce a guitar that is half the price of the guitar that we would build and far more than half the quality.” “We have bi-weekly meetings, via Zoom, and we go over our review of instruments that we’ve received, and we keep narrowing down the things that we still need to talk about. We’ve sent them examples of backs that we’ve made and taught them to tap and flex, and so on, and the results have been pretty good. Backs are not voiced in the same way that tops are, but it is possible to make them too stiff or too flexible. “So we’ve communicated our specifications for selecting woods and we’ve communicated our specifications for voicing backs, too. We’ve given them instructions for selecting wood for backs, sides and necks. We do that in our ’shop and we send them tops pretty much ready to glue on the body. “We’ve passed on full drawings and we approved each part before we built prototypes, but what we give them is a completed, voiced top. How does the collaboration with Eastman’s Chinese facility work? And that seems to do very well for our dreadnoughts.” The idea is to introduce a little more asymmetry into the top of the guitar. ![]() And we have a couple of other little tricks – the little finger braces on the sides are shaped differently, again, to create a stiff side and a flexible side. “What we’ve actually done is we only scallop the bass side of the X-brace we leave the treble side unscalloped. By stiffening the top asymmetrically, we’ve added some clarity to the bottom-end and at the same time we’ve added that singing, sustaining quality to the treble. So a bass note that is considered muddy or unclear would be one that doesn’t have a lot of high-end overtones that add clarity and definition. “Most instruments will generate a range of overtones with every note. However, we wanted to stiffen it up in certain areas, which will add that singing quality to the high end of the register. So we’ve altered the bracing a little bit in order to make it more asymmetrical and allow it to respond relatively freely to the lower frequencies. The larger guitars are typically bass-heavy, and they don’t have the kind of treble response that a smaller guitar has. “The dreadnought has difficulty in achieving string-to-string balance. The TS D we’ve reviewed is free of that muddy midrange often associated with dreadnoughts.

If you have a pair of floorstanding speakers in your setup, then pick Large. Obviously, Small and Large cover quite a wide range, but it’s fairly easy to pick the right one. This allows it to integrate them more effectively with the other speakers in your setup. Most receivers allow you to set the size of your speakers as either Small or Large. 90% of the time, there’s an issue with the speaker size settings. You should be able to find this option in its own settings menu.Īgain, this is something that can almost certainly be fixed by playing around in your receiver settings menu. If you’re using a Blu-ray player, you may need to set the output to multi-channel bitstream. You can always test a source you know is capable of full surround sound in order to check if your receiver or speaker is at fault. Again, play around with different settings, and see if it makes a difference. Receiver settings differ, but you should find the option for this under something labelled DSP Settings or similar. If that’s the case, you may need to set your receiver to translate a 2.1 mix into a 5.1 or larger. Movies and series are far more likely to have a surround mix, but not always. If you’re playing music through your receiver, then it probably won’t be, as most songs are mixed for two channels, not five or seven. The question you need to ask yourself is whether your source material is, in fact, capable of 5.1 or 7.1 surround sound. If that doesn’t solve the problem, it’s time to take a long, hard look through your source material. You’ll need to navigate to your receiver’s setup menu to adjust volume for individual speakers.Īssuming that’s not the case, check the speaker connections to make sure that everything is screwed in correctly. In some cases, the surround material in a particular scene of the movie or series can be very subtle, and your initial impression of there being a lack of surround sound might be because it’s playing too quietly. We’re going to propose an almost absurdly obvious solution – one that probably won’t solve the problem, but is worth doing anyway. Maybe next time, you should buy a surge protector as well. In many ways, a complete lack of sound is the easiest problem to solve – unless you really have been hit by a power surge or shipped a completely dud set of speakers. Regardless, testing different settings should very quickly solve this problem. In some cases, you may need to manually assign speakers to certain channels, and in others, the source material may not be able to play in the speaker setup you have. Navigate to the on-screen settings menu, and start testing different speaker settings. If you’re using bare wire, you need to make sure that it’s held down tightly by the binding post screws, without too much excess wire visible.Īssuming everything is correct and connected properly, the next best guess is that the problem is with a setting in your receiver’s software. ‘Connected properly’ means the power cable is fully inserted and the speaker wires have been properly pushed in (if you’re using banana plugs). Don’t laugh – it’s more common than you think. The next thing you need to do is check that your AV receiver is connected properly. ![]() You can’t read the rest of this guide if you’re dead from an electric shock. Step one: unplug your receiver from the power source. For that to happen, every single speaker in your setup would have to go on the fritz all at once, which isn’t going to happen unless there is a catastrophic power surge at the exact moment you sat down. The good news is that it’s extremely unlikely you’ve suffered a complete system failure. But you can’t, because there’s no sound coming out of your speakers. You’ve taken everything out of the box, connected it, spent hours fiddling with inputs and stripping speaker wire, and you’re finally ready to crash on the couch with a bowl of popcorn and watch Netflix in glorious 5.1. ![]()
![]() In each season there is a set of species that are at peak breeding activity, and even though some species are present throughout both seasons, it’s recommended to focus on each bird during the species’ peak season. A nocturnal checklist in eBird is a list that starts later than 20 minutes after sunset, or earlier than 40 minutes before sunrise.
